Cotija Cheese

Cotija Cheese


Cotija is a hand-made dry aged cheese similar to Parmesan with a nutty-salty flavor, used crumbled over enchiladas and bean dishes. White, salty, and somewhat granular, Cotija softens but does not actually melt when heated. When fresh, it bears a resemblance in flavor and texture to Feta cheese.

Not just for tacos, enchiladas and quesadillas; Cotija cheese is excellent in gratins, salads, pizzas, and pastas. A popular street vendor treat in Mexico is a roasted ear of corn spread with mayonnaise and rolled in crumbled Cotija cheese then dusted with chili powder and lime juice.
