Green Blackeye Beans
This thin-skinned bean is savory and robust yet has a subtle earthy sweet flavor and smooth buttery texture. It is often used in Africaa and Indian dishes, as well as those from Caribbean and the Southern United States.
The Blackeye bean is thought to have originated in China and from there probably traveled by sea to Arabic countries and on into Africa. It was introduced to the West in about the eighteenth century through African slave trade. The majority of these beans are now grown in California.
